Dairy Free, Wheat Free, Low Fat Flapjack Truffles

This is a super easy recipe that is perfect for busy mums with lots of impatient hungry mouths to feed. It's low in fat and has no added sugar making it a really healthy dessert for anyone but especially for little ones who shouldn't be eating too much sugar.

When I came up with recipe I had to make it with all my children's allergies in mind so it is also dairy, wheat, soya, nut, and egg free.

The best thing about this recipe is that it requires no cooking. You just blend it all together and bam it's ready! I have experimented and if you cook it on a greased baking tray for 25 mins at 175 C it's really nice too.

The only thing I can't tell you is how long the truffles will keep for- there are five of us in our house so that's never really an issue!

I hope you get chance to have a go at making this simple healthy treat. I've also suggested a few alterations you could make to make these treats a bit less healthy and a bit more decadent. Enjoy!

Ingredients

  • 150g/ 2 cups Dried Pitted Dates, soaked in boiling water
  • 225g/ 2 1/2 cups Rolled Oats
  • 1 Tablespoon Double Concentrate Orange Squash, or Fresh Apple/Orange Juice
  • 1 Teaspoon Ground Cinnamon
  • Handful Chopped Dried Apricots, or Dried Cranberries
  • Handful Sultanas
  • 5 Tablespoons Water Dates have been soaking in

Instructions

  1. Put dates in a bowl and cover in boiling water. Leave to soak for 5 minutes.
  2. Meanwhile add oats, cinnamon, apricots and sultanas to food processor.
  3. Add 1 tablespoon of double concentrate squash or fresh juice if using. Add 5 tablespoons of the water that the dates are soaking in.
  4. When dates have soaked add these to the food processor.
  5. Blitz everything in the food processor until everything is blended and mixed together. This shouldn't take too long.
  6. If your mixture is too dry and not all stuck together add more of the date water.
  7. Take out a small amount of the mixture and roll into a ball between the palms of your hand. The balls should be about the size of truffles.
  8. That's it- eat and enjoy. I put mine in the fridge just to help them firm up and stop them from being too sticky but we always eat a few straight away as well.

Alterations

If you don't have so many allergies to contend with or your not too fussed about keeping the Flapjack Truffles super healthy you could make the following alterations.

- Add a tablespoon of peanut butter- yum

- Add 15g of melted dark chocolate- this would increase the sugar and fat but it would still be dairy free

- Swap sultanas and apricots for any other dried fruit you can thing of.
